Pancakes throughout the history of Russia have been an indispensable companion of pagan rituals and church holidays. Over the past centuries, an incredible number of different recipes for pancakes and pancakes have appeared. However, until now, the skill of the hostess can be judged by her ability to bake thin lace pancakes.

Perhaps the most delicate, the most classic “grandmothers”, but also the most labor-intensive pancakes – with yeast. To prepare them you will need:

– 500 g of flour; – 10 g of dry yeast; – 2 eggs; – 650 ml of milk; – 1,5 tbsp. l. sugar; – 1 tsp. salt; – 2 tbsp. l. vegetable oil.

First you need to prepare a dough: dilute the yeast in a glass of warmed milk, add half a glass of flour and a tablespoon of sugar there. Stir well, cover and place in a warm place. When the dough has approximately doubled, add the remaining ingredients to it, sift the flour. Put the lid back on and set to rise. When the dough comes up, stir it again and put it in a warm place. Repeat this procedure 3 times. After the dough rises for the fourth time, you can start baking.

Pancakes with milk turn out to be more rich and at the same time require much less time and skill. For this recipe you need to take:

– 1,5 liters of milk; – 2 cups of flour; – 5 eggs; – 2 tbsp. l. sugar; – a pinch of salt; – 0,5 tsp. soda; – lemon juice or vinegar to extinguish the soda; – 0,5 cups of vegetable oil.

Beat the eggs into a saucepan or deep bowl, add sugar to them and beat with a fork, whisk or mixer. While whisking, gradually add flour to avoid clumping. Add salt and slaked soda. Pour milk into the dough, add butter and mix again.

The amount of milk may vary depending on the quality of the flour and the size of the eggs. It is best to focus on the consistency of the dough: in order for the pancakes to turn out thin and lacy, it should be slightly thicker than kefir

Pancakes at yogurt

Pancakes with kefir also do not take much time, they are easy to prepare in the morning for breakfast. However, unlike dairy ones, there is a slight sourness in their taste. This recipe will require:

– 2 glasses of flour; – 400 ml of kefir; – 2 eggs; – 0,5 tsp. soda; – 2-3 tbsp. l. vegetable oil; – 1,5 tbsp. l. sugar; – a pinch of salt.

Mix eggs with sugar, add a glass of kefir to them. While stirring, add flour. When there are no lumps left, pour in the remaining kefir, add soda, salt and oil.

How to bake lace pancakes

Regardless of the recipe you choose, bake the pancakes in a hot skillet on both sides. Despite the abundance of devices for baking pancakes with modern coatings, the “grandmother’s” cast-iron pan is still out of competition.

Pour oil into the pan only before baking the first pancake. Of course, it will turn out lumpy. In the future, you do not need to lubricate anything, since the oil is contained in the dough itself

Pancakes can be served with sour cream and jam or wrapped in different fillings: cottage cheese, fish or meat.
